Barbacoa Stuffed Peppers (Vegan & High-Fiber)

If you’re looking for a flavorful and satisfying way to enjoy vegan barbacoa, these Barbacoa Stuffed Peppers are a perfect addition to your weekly meal rotation. Made with Tacotarian at Home’s jackfruit barbacoa, this recipe combines smoky, slow-simmered flavor with hearty vegetables and rice for a comforting, plant-based dinner that’s simple to prepare.

Stuffed peppers are a classic comfort food, but this version takes things in a bold new direction. Instead of traditional meat fillings, we use tender jackfruit barbacoa paired with rice, beans, and spices to create a dish that’s rich, satisfying, and packed with nutrients. It’s an easy way to turn everyday ingredients into a wholesome vegan dinner recipe that the whole family can enjoy.

Why Jackfruit Barbacoa Works So Well

The star of this recipe is Tacotarian’s plant-based barbacoa, made from shredded jackfruit simmered in a smoky blend of spices and chiles. Jackfruit has a naturally meaty texture, which makes it an ideal ingredient for dishes that traditionally rely on slow-cooked meats.

In addition to its texture, jackfruit is gaining attention for its fiber content, making it a great ingredient for people looking to increase fiber in their diet. High-fiber foods help support digestion, gut health, and long-lasting fullness. As interest in high-fiber plant-based meals continues to grow, jackfruit has become a standout ingredient in modern vegan cooking.
