A lot of times when you go to a restaurant, you don’t really care who’s behind it or how it came about. After opening Tacotarian, we quickly realized that people loved meeting us and chatting about our story while eating a plant-based taco. So instead of hiding behind our brand, we want to be a part of it. Just like we want you to be a part of it. All of your posts, messages and reviews mean a lot to us. In the end, I’m a tacotarian, you’re a tacotarian, we’re all just TACOTARIANS.
The Back Story
One Trip. Un Viaje.
Tacotarian is the largest 100% plant-based Mexican restaurant chain in the United States. Founded in Las Vegas in 2018 by Carlos and Kristen Corral and Dan and Regina Simmons, we built something from scratch, refused to compromise on quality, and grew it into a multi-location brand that is now recognized as one of the most significant restaurant concepts in the country.
Every item on our menu is 100% plant-based. Not because we follow trends, but because we committed to a vision on day one and never wavered.

Born in Las Vegas. Inspired by Mexico City.
Tacotarian was born from a trip to Mexico City. The founders returned to Las Vegas inspired by the depth of flavor, the street food culture, and the idea that Mexican cuisine could be reimagined in a way that was entirely plant-based without sacrificing anything. No compromises on flavor. No pale imitations. Real Mexican food built from scratch, protein by protein.
The first Tacotarian opened in Las Vegas in 2018 at 6135 S Fort Apache Road in Southwest Las Vegas. From that original location, the concept grew, driven by the quality of the food, the loyalty of the community, and a mission that resonated far beyond the vegan world. Today, Tacotarian operates six locations across Las Vegas and San Diego, serves tens of thousands of customers monthly, and counts 75% non-vegan customers among its regulars.
The food did that. Not marketing, not trends — the food.

The Dream Team
Regina Simmons
Regina was born and raised in Mexico City, and since 2004 she has called Las Vegas home. As a Certified Servsafe Proctor, she builds kitchen layouts and creates systems and processes following strict sanitation requirements.
Kristen Corral
Orlando-born, but a Las Vegas local for over 20 years, Kristen is an accomplished restaurateur, restaurant marketing expert, guest loyalty master and a devoted foodie with a passion for animals & sustainable living.
Carlos Corral
Carlos, with over 20 years in the culinary business, stands out as a skilled restaurant owner whose expertise spans leadership, management, and developing comprehensive bar training programs. While he’s from Los Mochis, Sinaloa, he’s resided in Vegas since 2001.
Dan Simmons
Originally from the suburbs of Chicago, Dan has resided in Las Vegas since 2005. He specializes in all the background processes; licensing, insurance, tax matters, legal compliance, but his main expertise is restaurant finance.
