Let's face it, nachos have always been the life of the party, but who says you can't party on your own terms? With this recipe, we're taking the road less traveled, swapping out the usual suspects for ingredients that add a pop of color, a burst of flavor, and a whisper of "let's do this again" with every bite. We're talking about layers of crispy chips adorned with melty cheese, punctuated with the freshness of tomatoes and the kick of jalapeños, all coming together in a symphony of yum.

But before we dive into the "how," let's talk about the "what." The beauty of nachos lies in their versatility. This dish is a canvas, and you're the artist. Every layer is an opportunity to add your signature touch, making each forkful a reflection of your culinary prowess and personal taste preferences.

So, grab your apron, and let's turn the humble nacho into a gourmet delight that's sure to make your taste buds sing. Here's how to create a single serving of nachos that's anything but ordinary.

Gourmet Single-Serving Nachos

  • Tortilla Chips: Enough to fill your plate- don't be stingy
  • Shredded Cheese : 1/2-1/2 cup  (we like good planet or daiya oat milk)
  • Black Beans: 1/4 cup -rinsed and drained
  • Tacotarian Birria: 1/4 cup
  • Sliced Jalapeños: 1 tablespoon (adjust based on your heat preference)
  • Sour Cream: (for dolloping on top): 1 tablespoon
  • Pico de gallo: 2 tablespoons
  • Guacamole: 1 tablespoon (because what are nachos without guac?)
  • Fresh Cilantro, chopped (for garnish): 1 teaspoon
  • pickled red onions: 1-2 tablespoons

  1. Preheat your oven to 375°F (190°C). While it's warming up, take a moment to line a baking sheet with parchment paper for an easy cleanup.

  2. Layer the Chips and Cheese: Spread the tortilla chips in a single layer on a baking sheet. Sprinkle the shredded cheese evenly over the chips, ensuring every chip gets some cheesy love. Make sure to get cheese on all the chips!

  3. Add the Toppings: Scatter the black beans, and birria. The more, the merrier, as each ingredient adds a layer of flavor and texture.

  4. Bake to Perfection: Slide the baking sheet into the oven and bake for about 5-7 minutes, or until the cheese is beautifully melted and the chips are just starting to turn golden.

  5. The Finishing Touches: Remove your masterpiece from the oven and immediately layer on pico de gallo, jalapeños, pickled onions, sour cream and guacamole. Sprinkle the fresh cilantro over the top for a burst of color and freshness.

  6. Serve Immediately: Nachos are best enjoyed fresh from the oven, so dive in while the cheese is hot and the chips are crispy.

There you have it, a single serving of nachos that's as satisfying to make as it is to eat. This dish proves that sometimes, the best companion is a plate of good food. So, here's to nachos – the ultimate comfort food that never disappoints.
